Japanese Curry (wafuu) Recipe

Ingredients
  • 1 lb boneless skinless chicken, cut into chunks .
  • 1 medium carrot, sliced to 1/2-inch pieces .
  • 1 tbsp canola oil .
  • 1 medium potato, sliced in 1-inch pieces .
  • salt & pepper .
  • 1 bay leaf .
  • 3 tbsps butter .
  • 2 tbsps crushed tomatoes .
  • 3 tbsps flour .
  • 1 tsp honey .
  • 1/2 medium onion, finely sliced .
  • 3 c chicken stock .
  • 1 small fuji apple, grated .
  • 1 garlic clove, finely sliced .
  • 1 tsp fresh ginger, finely sliced .
  • 2 tbsps curry powder .
  • 1/2 medium onion, cut into 1-inch chunks .
  • 1 tbsp soy sauce

Directions
  • Step #1 Bring chicken stock to a simmer.
  • Step #2 Meanwhile, season chicken with salt & pepper, & brown in oil.
  • Step #3 After approx 4 mins, remove to a separate dish & set aside.
  • Step #4 Melt the butter & add ginger, garlic, & onion.
  • Step #5 Cook a few mins until done.
  • Step #6 Sprinkle top in the flour & cook this until browned (basically, make a roux.
  • Step #7 ) Add curry powder & tomatoes, stir well.
  • Step #8 Mix in 1/2 c hot stock, making sure to scrape the stuff off of the bottom of the skillet.
  • Step #9 Pour the mixture into the simmering stock.
  • Step #10 Add the chicken, potato, onion, & carrot.
  • Step #11 Simmer 30 mins.
  • Step #12 Add the apples, soy sauce, & honey.
  • Step #13 Allow to cook for 5 more mins, remove this from heat & serve this with rice.
