Chickpea And Pasta Soup Recipe

Ingredients
  • 1 c cooked chickpeas
  • salt & pepper to taste
  • 2 tbsps sliced fresh rosemary
  • 2 c low fat, low sodium chicken broth
  • 2 c crushed tomatoes
  • 7 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 c cooked elbow macaroni

Directions
  • Step #1 In a large pot over med-heat/flame, mix the oil & garlic & saute for 3 mins.
  • Step #2 Stir in the rosemary & saute for 2 more mins.
  • Step #3 Add the tomatoes & let simmer for 15 mins.
  • Step #4 Add the broth & chickpeas & let simmer for an extra 10 mins.
  • Step #5 Finally, add the macaroni & allow to heat through completely, about 5 more mins.
  • Step #6 Spice up with salt & pepper to taste & serve.
