Sausage Egg Casserole Recipe

Ingredients
  • 2 c small curd cottage cheese .
  • 1 1/2 c egg substitute or 8 eggs .
  • 1 small onion, sliced .
  • 1 c baking mix .
  • 1 medium green pepper, sliced .
  • 1 lb Italian turkey sausage .
  • 4 oz sliced green chilies (1 small can) .
  • 1 c milk .
  • 2 c shredded cheese

Directions
  • Step #1 In a large nonstick skillet, cook sausage, green pepper & onion over med-heat/flame until meat is no longer pink; drain.
  • Step #2 In a large mixing bowl, beat eggs.
  • Step #3 Add the baking mix & milk.
  • Step #4 add the cottage cheese, shredded cheese, & chiles.
  • Step #5 Stir in the cooked sausage/onions/peppers.
  • Step #6 pour this into a 13-in X 9-in X 2-in pan coated with nonstick cooking spray.
  • Step #7 Bake at 350F for 35-40 mins or until a knife inserted near the center comes out clean.
