Chocolate Fiber Muffins Recipe

Ingredients
  • 3/4 c sugar .
  • 1 1/2 c gluten-free flour (Gluten-Free Flour Blend) .
  • 4 c water .
  • 1 c cocoa .
  • 5 tbsps cooking oil .
  • 1 1/2 tsps baking soda .
  • 1/2 tsp salt .
  • 1 1/2 tsps baking powder .
  • 1 1/2 c ground flax seeds .
  • 2 eggs .
  • 1 1/2 tsps guar gum or xanthan gum .
  • 1 c buckwheat flour .
  • 3/4 c Splenda sugar substitute .
  • 1 tbsp vinegar .
  • 2 tsps pure vanilla extract

Directions
  • Step #1 Mix buckwheat flour, flax, & water.
  • Step #2 Let stand.
  • Step #3 Preheat oven to 350°F Line two muffin trays with paper baking c.
  • Step #4 Spray with oil or Pam.
  • Step #5 In a separate bowl, mix all dry ingredients.
  • Step #6 Add vanilla, vinegar, oil, & eggs to buckwheat mixture.
  • Step #7 Blend well.
  • Step #8 Add liquids to dry ingredients & mix well.
  • Step #9 Fill c about 2/3 full.
  • Step #10 Bake for 20 - 30 mins, or until toothpick inserted comes out clean.
