Ingredients
4 tbsps lard or bacon drippings .
1 tbsp salt .
1 1/2 c water .
1 green pepper, seeded & sliced .
1 tbsp flour .
2 garlic cloves, crushed .
1 c monterey jack cheese, shredded .
1 lb lean pork, cut into 1/4 inch cubes .
1/2 tsp salt .
1/2 tsp pepper .
1 tbsp red wine vinegar .
2 stalks celery, sliced .
5 tbsps chili powder .
1 medium onion, sliced .
1 tbsp dried oregano .
1 tbsp brown sugar .
1 large onion, sliced .
1 c pitted black olives, coarsely sliced .
2 lbs round steaks, trimmed & cut into 1/4 inch cubes .
4 medium tomatoes, peeled & coarsely sliced .
2 bay leaves
Directions
Step #1 In a medium saucepan simmer the tomatoes, 1 large onion, celery, water, 1/2 tsp salt & pepper for 30 mins covered & another 30 mins uncovered.
Step #2 Set aside.
Step #3 In the meantime, saute the medium onion, green pepper, In a large-ish dutch oven over med-heat/flame, & garlic in the lard for 3-5 mins.
Step #4 With a slotted spoon remove the vegetables from the pan & set aside.
Step #5 Add the meats to the dutch oven & brown over medium-high heat for 5-8 mins.
Step #6 Add more lard if necessary.
Step #7 Add the flour to the browned meats, stirring well.
Step #8 Simmer for 2 mins.
Step #9 Return the vegetable mixture to the dutch oven with the meats.
Step #10 Add the chili powder, 1 tbsp salt, oregano, brown sugar, bay leaves, & vinegar.
Step #11 Add the tomato sauce.
Step #12 Stir.
Step #13 Cover up & let simmer over low heat/flame for 2 hrs.
Step #14 Add more water if necessary (It should be thick).
Step #15 Add the olives & cheese & let simmer covered for an extra 45 mins, stirring every once in awhile.
Step #16 Remove bay leaves.
Step #17 Serve in bowls with finely sliced onions & more cheese if desired.
Step #18 Good with a tossed salad & corn bread.
