Ingredients
1/2 c confectioners' sugar
1 c butter, softened
2 eggs
1/2 c raspberry jam
1 c confectioners' sugar
2 tsps almond extract
1/2 c butter
1/4 c unsweetened cocoa powder
1/2 tsp almond extract
1/2 c rice flour
24 maraschino cherries with stems
1/2 c white sugar
2 tbsps melted butter
1/4 c cornstarch
2 c all-purpose flour
Directions
Step #1 In a large bowl, cream 1 c butter & 1/2 c confectioners' sugar until light & fluffy.
Step #2 Beat in 2 c all-purpose flour & 1/4 c cornstarch.
Step #3 Shape into a ball & put in the fridge for 1 hr.
Step #4 Roll out to 1/4 inch thickness, cut into appropriate size circles with a glass or cookie cutter & press into tart shells.
Step #5 Spoon 1 tsp jam into bottom of each shell.
Step #6 In a large bowl, cream 1/2 c butter & 1/2 c white sugar until light & fluffy.
Step #7 Beat in rice flour & cocoa powder.
Step #8 Beat in eggs & 2 tsps almond extract.
Step #9 Fill tarts 2/3 full.
Step #10 Bake in the preheated oven for 10 to 15 mins, or until golden brown & filling is set.
Step #11 Allow to cool.
Step #12 In a small bowl, Stir together 1 c confectioners' sugar, 2 tbsps butter & 1/2 tsp almond extract.
Step #13 Spread on tarts.
Step #14 Garnish each tart with a maraschino cherry.
