Chicken & Dumplings Recipe

Ingredients
  • 1 c fat-free chicken broth .
  • 1/4 c shortening .
  • 2 c flour .
  • salt .
  • 1 1/2-2 lbs boneless skinless chicken breasts, in large pieces .
  • 1 (10 1/2 oz) can condensed cream of chicken soup (i use healthy request(with added herbs) .
  • 2 chicken bouillon cubes

Directions
  • Step #1 Fill large pot with 4 c water & bring to a boil.
  • Step #2 Add chicken & bullion.
  • Step #3 Return to boil.
  • Step #4 Add soup & broth.
  • Step #5 In mixing bowl, mix flour & shortening.
  • Step #6 Mix well with pastry mixer then add 3/4 c of broth mixture from pot.
  • Step #7 Mix until dough is firm.
  • Step #8 On waxed paper sprinkled with flour, roll dough to 1/4"-1/2" thick.
  • Step #9 Cut into 1" wide strips.
  • Step #10 Add dough to broth mixture & reduce heat.
  • Step #11 Add salt to taste.
  • Step #12 Simmer 30 mins.
