Chicken Tortilla Soup Recipe

Ingredients
  • 1/2 c shredded Monterey Jack cheese (optional)
  • 1 c chunky salsa
  • 1/2 tsp olive oil
  • 8 oz corn tortilla chips
  • 2 (14.5 oz) cans chicken broth
  • 1/4 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp minced garlic
  • 1 tbsp lemon juice
  • 1 c sliced onion
  • 1 c frozen corn kernels
  • 2 skinless, boneless chicken breasts

Directions
  • Step #1 In a large pot over med-heat/flame, saute the chicken in the oil for 5 mins.
  • Step #2 Add the garlic & cumin & mix well.
  • Step #3 Then add the broth, corn, onion, chili powder, lemon juice & salsa.
  • Step #4 Reduce heat to low & let simmer for about 20 to 30 mins.
  • Step #5 Break up some tortilla chips into individual bowls & pour soup over chips.
  • Step #6 Top with the Monterey Jack cheese & a little sour cream.
