German (pork) Skillet Recipe

Ingredients
  • white pepper, to taste .
  • 1-1 1/2 c unsweetened applesauce .
  • 1 lb ground pork .
  • 1 c onions, sliced (about 1/2 of an average onion) .
  • garlic salt, to taste .
  • 1 lb sauerkraut .
  • 1 tbsp prepared horseradish (optional) .
  • 1/2 c rice, uncooked

Directions
  • Step #1 Drain the sauerkraut & reserve 2 Tbls of the juice.
  • Step #2 Layer the sauerkraut & reserved liquid, rice & onion in a 10 inch skillet.
  • Step #3 Crumble the pork on top in an even layer & pat down carefully.
  • Step #4 Sprinkle top the pork with Bratwurst Spice uping OR a combo of white pepper & garlic salt.
  • Step #5 If you are using the horseradish, mix it in the applesauce & spread on top of the pork.
  • Step #6 Cover up the skillet & cook over low heat/flame for 30 mins.
  • Step #7 Resist peeking so that the rice can absorb most of the liquid.
  • Step #8 OK, now you can peek.
  • Step #9 Check the rice for doneness.
  • Step #10 If the rice is done & there is too much liquid for your liking, cook for a few mins longer to boil off the excess.
  • Step #11 If the rice isn't quite done yet, add a splash of water & continue until done.
  • Step #12 Keep an eye on it though as the sauerkraut will burn if your not careful (golden brown is OK, & actually desireable, but black is a NO-NO).
