Chicken And Shiitake Mushrooms In Tomato Sauce Recipe

Ingredients
  • fresh ground black pepper .
  • 1 tbsp extra-virgin olive oil .
  • salt .
  • 4 (6-8 oz) boneless skinless chicken breast halves .
  • 1 (3 1/2 oz) package shiitake mushrooms, stems discarded & caps sliced .
  • 1 tsp minced fresh oregano or fresh thyme .
  • 2 tbsps sliced fresh parsley .
  • 1/2 c dry white wine .
  • 1 garlic clove, crushed through a press .
  • 1 (14 1/2 oz) can whole tomatoes with juice

Directions
  • Step #1 Heat the oil In a large-ish skillet; add in the chicken & mushrooms; cook over med-low heat until golden, about 3 mins on each side.
  • Step #2 Add in the garlic, salt, & pepper; stir until mixed.
  • Step #3 Transfer chicken & mushrooms to a side dish; add wine to the skillet.
  • Step #4 Increase heat to high; boil the wine, scraping up any browned bits from the bottom of the skillet, until reduced to a thin film.
  • Step #5 Add the tomatoes; heat to boiling, breaking the whole tomatoes into pieces with the side of a wooden spoon or spatula.
  • Step #6 Return the chicken, mushrooms, & any juices to the skillet; heat to a gentle simmer, stirring to mix.
  • Step #7 Cover up & cook over med-low until the chicken is cooked through, about 8 mins.
  • Step #8 Add in parsley & fresh oregano or thyme.
  • Step #9 Transfer chicken to serving platter; boil the tomato sauce over high heat, until slightly thickened, stirring every once in awhile, about 3 mins; add salt & pepper to taste.
  • Step #10 Spoon tomato sauce over the chicken & serve as soon as possible.
