Almond Shortbread Recipe

Ingredients
  • 1/2 c real butter, room temp .
  • 1/4 tsp salt .
  • 1 tsp vanilla .
  • 1 1/4 c flour .
  • 1/3 c sugar .
  • 1 tsp almond extract .
  • 1/3 c almonds (I buy the slivered ones)

Directions
  • Step #1 Cream butter, sugar & vanilla.
  • Step #2 With your almonds, either just crush them or you can put them into a mixer/food processor/blender to either make very small pieces or ground.
  • Step #3 its your preference as to how you would like them.
  • Step #4 mix the almonds with the flour & salt.
  • Step #5 When the butter is creamed, add the flour mix.
  • Step #6 it will seem crumbley, keep mixing until it comes together.
  • Step #7 When mixed well, separate into 4 equal balls.
  • Step #8 I use a pizza pan because I can do the whole batch on one pan.
  • Step #9 Lightly grease pan.
  • Step #10 Take balls & press until about 1/4-inch thick.
  • Step #11 cut into six pieces (yes, before you bake).
  • Step #12 Bake for 12-14 mins.
  • Step #13 You don't want them browned, just set well.
  • Step #14 When they are done, take them out & cut again & put on cooling rack still together.
  • Step #15 Let cool.
  • Step #16 Store in tight container.
  • Step #17 I use ziplock bags.
