Roasted Pepper-salt Blend Recipe

Ingredients
  • 1/4 c szechwan pepper, thorns & twigs removed (option 2) .
  • 1/2 c kosher salt .
  • 1/4 c dried red chilies (option 3) .
  • 1/4 c peppercorn mix (option 1)

Directions
  • Step #1 In a heavy skillet, mix the salt with 1 of the options given.
  • Step #2 Toast over moderate heat, stirring constantly, until the salt turns off-white.
  • Step #3 This should take about 5 mins.
  • Step #4 Adjust heat as necessary to keep the peppercorns or chili for burning being careful as both the chili & peppercorns will pop during this process.
  • Step #5 Remove the mixture from heat & allow this to cool somewhat.
  • Step #6 Place the ingredients in a clean coffee or spice grinder & mix until a fine powder.
  • Step #7 Sift through a sieve to remove any husks or debris.
  • Step #8 Store mix in a clean dry jar with a tight fighting lid.
