7 oz fine-quality bittersweet chocolate, finely sliced (not unsweetened) .
For griddle cakes .
3/4 c well-shaken buttermilk .
2 whole large eggs .
1/4 c vegetable oil .
1 large egg yolk .
1/4 c powdered sugar .
1 1/4 c all-purpose flour .
For sauce .
unsalted butter, for greasing griddle .
3/4 tsp cinnamon
Directions
Step #1 Make sauce:
Bring cream to a boil in a 1-quart saucepan, then pour hot cream over chocolate & sugar in a bowl, carefully whisking until smooth.
Step #2 Mix in Amaretto.
Step #3 Keep warm or at about room temp.
Step #4 Make griddle cakes:
Sift together cocoa, baking soda, sugar, flour, & salt into a large bowl.
Step #5 Whisk in eggs, yolk, buttermilk, oil, & vanilla until mixd well.
Step #6 Heat a griddle or nonstick skillet over moderately low heat & lightly coat with butter.
Step #7 Working in batches of 2 or 3, pour 1/3 c batter per cake onto hot griddle & cook this until bubbles appear on surface, 1 to 2 mins.
Step #8 Flip cakes with a large spatula & cook this until tops spring back when pressed carefully, about 1 min more.
Step #9 Transfer to a plate & loosely cover with foil wrap to keep warm.
Step #10 Add 1/2 tsp butter to griddle between batches.
Step #11 Serve cakes in stacks, topped with chocolate sauce.
