Sunny California Sour Cream Pineapple Cake With Pineapple Glaze Recipe

Ingredients
  • 1 c crushed pineapple, with a little juice .
  • 1/3 c oil .
  • 1 tbsp crushed pineapple (a little juice & a little fruit) .
  • PINEAPPLE GLAZE .
  • 1 (18 1/2 oz) package yellow cake mix (without pudding) .
  • 1/2 c sour cream .
  • 3 eggs .
  • 1/2 c sifted powdered sugar

Directions
  • Step #1 FOR THE CAKE: Beat together all the ingredients, for 4 mins, at medium speed.
  • Step #2 Spread batter evenly into a greased 10 inch tube pan & bake in a 350°F oven for 45 to 50 mins, inserted in center, or until a cake tester, comes out clean.
  • Step #3 Allow to cool in pan.
  • Step #4 When cook, remove this from pan & brush top this with Pineapple glaze, & allow a little to drip down the sides.
  • Step #5 Serves 10.
  • Step #6 FOR THE GLAZE: Stir together pineapple & sugar until mixed.
  • Step #7 NOTE: This cake is a good choice for a ladies luncheon, for it is very light & very delicious.
