Pesto And Lemon Gnocchi Recipe

Ingredients
  • 2 c fresh basil, firmly packed .
  • 1 garlic clove, crushed .
  • 2 garlic cloves, sliced .
  • 500 g potato gnocchi .
  • salt & pepper .
  • 300F ml cream .
  • 1/4 c pine nuts, lightly toasted .
  • fresh basil, to garnish .
  • 1/3 c extra virgin olive oil .
  • Sauce .
  • 1 tbsp lemon juice .
  • lemon wedges, to serve .
  • 2 tsps olive oil .
  • 1/2 c parmesan cheese, grated .
  • Pesto

Directions
  • Step #1 To make the pesto, mix the basil, pinenuts & garlic in a mixer or food processor/blender.
  • Step #2 Process until smooth.
  • Step #3 With the motor running, slowly pour in the oil.
  • Step #4 Add the parmesan & process until smooth.
  • Step #5 Heat the oil in a small pan.
  • Step #6 Add the garlic & cook over med-heat/flame for 1 min.
  • Step #7 Add the cream & 3 tablesspoons of the pesto & bring to the boil.
  • Step #8 Be careful as it will boil over easily.
  • Step #9 Reduce the heat to low & let simmer for 3 mins.
  • Step #10 Meanwhile, cook the gnocchi according to the packet instructions.
  • Step #11 Drain & place the gnocchi In a large-ish bowl.
  • Step #12 Pour on the sauce & toss thoroughly.
  • Step #13 Spice up with salt & pepper & stir through the lemon juice just before serving.
  • Step #14 Transfer to a serving bowl.
  • Step #15 Garnish with basil & serve this with lemon wedges.
