Eggplant (aubergine) Dip Recipe

Ingredients
  • 1 c breadcrumbs .
  • 1/2 tsp hot paprika .
  • 1/2 c fresh parsley, sliced .
  • 2 tsps ground cumin .
  • 2 garlic cloves, crushed .
  • 1/4 c yoghurt (natural yoghurt) .
  • 1 (300 g) eggplants, medium size .
  • 2 tbsps lemon juice

Directions
  • Step #1 Place eggplant on oven tray.
  • Step #2 Bake, uncovered, in moderate oven 180oC about 40 mins or until soft.
  • Step #3 Remove eggplant & place eggplant in papper bag for 10 mins.
  • Step #4 Remove & discard eggplant skin, chop flesh.
  • Step #5 Blend or process eggplant with remaining ingredients until smooth.
  • Step #6 You may need to add more yoghurt depending how smooth or thick you prefer your dip.
  • Step #7 Cover up, put in the fridge until cold.
