Texas Chocolate Cupcakes Recipe

Ingredients
  • 2 c sugar .
  • 1/4 c milk .
  • 2 c flour .
  • 1 c vegetable oil .
  • 1/4 c baking cocoa .
  • Caramel Icing .
  • 2-2 1/4 c confectioners' sugar .
  • 1/3 c buttermilk .
  • 1 tsp vanilla extract .
  • 1 c packed brown sugar .
  • 1/2 c butter, cubed .
  • 1 c water .
  • 2 eggs .
  • 1/2 tsp baking soda .
  • 1/2 c butter, cubed .
  • 1 tsp salt

Directions
  • Step #1 In a large mixing bowl, mix the flour, sugar, salt & baking soda.
  • Step #2 In a large saucepan over med-heat/flame, water, bring cocoa, oil & butter to a boil.
  • Step #3 Gradually add to dry ingredients; mix well.
  • Step #4 Combine eggs, buttermilk & vanilla; gradully add to batter & mix well (batter will be very thin).
  • Step #5 Fill paper lined muffin c three-fourths full.
  • Step #6 Bake at 350 for 15-20 mins or until a toothpick comes out clean.
  • Step #7 Cool for 10 mins before removing from pans to wire racks to cool completely.
  • Step #8 For icing, in a heavy saucepan, mix the brown sugar, butter & milk.
  • Step #9 Cook & stir over low heat/flame until sugar is dissolved.
  • Step #10 Increase heat to medium.
  • Step #11 Do not stir.
  • Step #12 Cook for 3-6 mins or until bubbles form in center of mixture & syrup turns to amber.
  • Step #13 Remove from the heat; transfer to a small mixing bowl.
  • Step #14 Cool to about room temp.
  • Step #15 Gradually beat in confectioners' sugar.
  • Step #16 Spread over ccakes.
