Ingredients
2 c sugar .
1/4 c milk .
2 c flour .
1 c vegetable oil .
1/4 c baking cocoa .
Caramel Icing .
2-2 1/4 c confectioners' sugar .
1/3 c buttermilk .
1 tsp vanilla extract .
1 c packed brown sugar .
1/2 c butter, cubed .
1 c water .
2 eggs .
1/2 tsp baking soda .
1/2 c butter, cubed .
1 tsp salt
Directions
Step #1 In a large mixing bowl, mix the flour, sugar, salt & baking soda.
Step #2 In a large saucepan over med-heat/flame, water, bring cocoa, oil & butter to a boil.
Step #3 Gradually add to dry ingredients; mix well.
Step #4 Combine eggs, buttermilk & vanilla; gradully add to batter & mix well (batter will be very thin).
Step #5 Fill paper lined muffin c three-fourths full.
Step #6 Bake at 350 for 15-20 mins or until a toothpick comes out clean.
Step #7 Cool for 10 mins before removing from pans to wire racks to cool completely.
Step #8 For icing, in a heavy saucepan, mix the brown sugar, butter & milk.
Step #9 Cook & stir over low heat/flame until sugar is dissolved.
Step #10 Increase heat to medium.
Step #11 Do not stir.
Step #12 Cook for 3-6 mins or until bubbles form in center of mixture & syrup turns to amber.
Step #13 Remove from the heat; transfer to a small mixing bowl.
Step #14 Cool to about room temp.
Step #15 Gradually beat in confectioners' sugar.
Step #16 Spread over ccakes.
