Creole Hot Water Cornbread Recipe

Ingredients
  • 3/4 tsp Creole seasoning
  • 1 2/3 c cornmeal
  • lard for frying
  • 5 tsps shortening
  • 1 tbsp minced onion
  • 1 1/4 c boiling water
  • 1 3/4 tsps white sugar

Directions
  • Step #1 Combine the cornmeal, onion, Creole seasoning, & sugar in a medium bowl.
  • Step #2 Pour in boiling water & shortening; stir until the shortening melts.
  • Step #3 Melt lard or bacon fat to a depth of 1/2 inch in a large skillet; bring to a temperature of 375 degrees F (190 degrees C) over medium-high heat.
  • Step #4 Shape heaping tbsps of the dough into flattened balls (thickness is a personal preference).
  • Step #5 Fry in hot oil, until crisp & golden brown, turning once, about 5 mins.
  • Step #6 Drain on paper towels.
