Low-fat Cuban Black Beans Recipe

Ingredients
  • 1 1/2-3 c chicken stock .
  • 2 garlic cloves, minced .
  • 2 (15 oz) cans black beans, rinsed & drained .
  • 2 tbsps finely sliced fresh cilantro .
  • salt & pepper .
  • 3 scallions, finely sliced .
  • 1/2 green bell pepper, finely sliced .
  • 1/2 tsp sugar .
  • 1 oz Canadian bacon, minced .
  • 1 small onion, finely sliced .
  • 1/2 tsp dried oregano .
  • 1 bay leaf .
  • 1 tbsp olive oil or lard .
  • 1/2 tsp ground cumin .
  • 1/4 c white wine (optional)

Directions
  • Step #1 Heat the oil or lard In a large-ish nonstick skillet over med-heat/flame.
  • Step #2 Add the bellpeppers, onions, cilantro, scallions, cumin, bacon, garlic, oregano, & bay leaf.
  • Step #3 Cook for 5 minures or until the vegetables are soft but not brown.
  • Step #4 Stir in the beans & wine.
  • Step #5 Bring to a boil over high heat.
  • Step #6 Stir in the sugar & 1 1/2 c of the stock or broth.
  • Step #7 Reduce the heat to medium & let simmer for 5 mins.
  • Step #8 Remove bay leaf.
  • Step #9 Puree one-quarter of the bean mixture in a mixer.
  • Step #10 Stir the puree into the simmering beans.
  • Step #11 Simmer for 2 mins more, or until thick but still soupy.
  • Step #12 If the bean mixture is too thick add, more stock or broth.
  • Step #13 Spice up w/ salt & pepper.
