Double Chocolate Apricot Muffins Recipe

Ingredients
  • Topping .
  • 3/4 c low-fat milk .
  • 1/2 c semi-sweet chocolate chips .
  • 1 3/4 c flour .
  • 2 tsps vanilla .
  • 1 c granulated sugar .
  • 1/2 c unsweetened cocoa powder .
  • 2 eggs .
  • 1/4 tsp salt .
  • 2 tbsps granulated sugar .
  • 2/3 c coarsely sliced dried apricots .
  • 2 tsps baking powder .
  • 1/2 c vegetable oil

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Grease or put paper liners in 12-c muffin pan.
  • Step #3 In a small bowl, cocoa powder, mix together flour, baking powder & salt.
  • Step #4 In a large bowl, mix together sugar, milk, eggs, oil & vanilla.
  • Step #5 Mix in dry ingredients just until mixd.
  • Step #6 Fold in chocolate & apricots.
  • Step #7 Scoop batter into prepared muffin c.
  • Step #8 Topping: sprinkle with sugar.
  • Step #9 Bake in preheated oven for 22 mins or until a tester inserted into center comes out clean.
  • Step #10 Let muffins cool in pan on a wire rack for 5 mins.
  • Step #11 Transfer to rack & let cool completely.
