Creamy Pineapple Salad Recipe

Ingredients
  • 1 c cottage cheese
  • 1 (3 oz) package lemon flavored gelatin
  • 1/4 c sugar
  • 1 (20 oz) can crushed pineapple
  • 1 c heavy cream

Directions
  • Step #1 Drain pineapple, reserving the juice in a small saucepan.
  • Step #2 Set pineapple aside.
  • Step #3 Add enough water to juice to make 1-1/3 c; bring to a boil.
  • Step #4 Place gelatin in a bowl; add boiling liquid & stir this to dissolve.
  • Step #5 Cool until slightly thickened.
  • Step #6 In a mixing bowl, whip cream; slowly beat in sugar.
  • Step #7 Fold into the gelatin mixture.
  • Step #8 Stir in pineapple & cottage cheese; mix well.
  • Step #9 Pour into a 1-1/2 qt.
  • Step #10 serving bowl; chill at least 3 hrs or overnight.
