- 1 (3 oz) package lemon flavored gelatin
- 1/4 c sugar
- 1 (20 oz) can crushed pineapple
- 1 c heavy cream
Directions
- Step #1 Drain pineapple, reserving the juice in a small saucepan.
- Step #2 Set pineapple aside.
- Step #3 Add enough water to juice to make 1-1/3 c; bring to a boil.
- Step #4 Place gelatin in a bowl; add boiling liquid & stir this to dissolve.
- Step #5 Cool until slightly thickened.
- Step #6 In a mixing bowl, whip cream; slowly beat in sugar.
- Step #7 Fold into the gelatin mixture.
- Step #8 Stir in pineapple & cottage cheese; mix well.
- Step #9 Pour into a 1-1/2 qt.
- Step #10 serving bowl; chill at least 3 hrs or overnight.
