Crunchy Dijon Pork Chops Recipe

Ingredients
  • 1 tbsp fresh parsley .
  • 4 small pork chops (fat removed) .
  • salt & pepper, to taste .
  • 2 tbsps olive oil .
  • 1 1/2 tsps Dijon mustard .
  • 1 egg .
  • 1 large whole wheat pita bread (100% whole grain variety) .
  • cayenne pepper, to taste

Directions
  • Step #1 Make bread crumbs: Rip the whole wheat pita bread into pieces & throw into a mixer or food processor/blender.
  • Step #2 Grind until you have crumbs.
  • Step #3 Remove & pour this into a flat dish.
  • Step #4 (Pie plates work great for this.
  • Step #5 ) Add generous amounts of salt & freshly ground pepper, fresh parsley & a sprinkle of cayenne pepper to the bread crumbs to season.
  • Step #6 Make egg dip: In a small, beat egg with dijon mustard, flat dish, salt & pepper & some fresh herbs of your choosing.
  • Step #7 (I happened to have parsley on hand.

  • Step #9 Prepare pork: If pork is fairly thick, lb between a piece of plastic wrap with a meat mallet or rolling pin until about half the thickness.
  • Step #10 Heat your pan, & then add olive oil to the bottom.
  • Step #11 Swirl around, & let the oil get nice & hot.
  • Step #12 Meanwhile, dip each pork chop first into the egg mixture, then into the bread crumb mixture.
  • Step #13 Place each pork chop right into the hot oil.
  • Step #14 Cook each chop until well done - about 10-14 mins total.
  • Step #15 Serve hot, crispy dijon chops with a fresh side salad or other greens.
