Chicken Costa Brava Recipe

Ingredients
  • 1 tsp ground cinnamon
  • 1 (14.5 oz) can stewed tomatoes
  • 2 cloves garlic, minced
  • 1/2 c salsa
  • 1 tsp ground cumin
  • 1 onions, quartered
  • 1 (20 oz) can pineapple chunks
  • 2 tbsps water
  • 1 tbsp vegetable oil
  • 2 tbsps cornstarch
  • 10 skinless, boneless chicken breast halves
  • salt to taste
  • 1 red bell pepper, thinly sliced
  • 2 c black olives

Directions
  • Step #1 Drain pineapple, reserving juice.
  • Step #2 Sprinkle top with salt.
  • Step #3 In a large frying pan, brown chicken in oil.
  • Step #4 Combine cumin & cinnamon, & sprinkle it over chicken.
  • Step #5 Add garlic & onion; cook this until onion is soft.
  • Step #6 Add reserved pineapple juice, tomatoes, olives, & salsa.
  • Step #7 Cover, & let simmer 25 mins.
  • Step #8 Mix cornstarch with water; stir in theto pan juices.
  • Step #9 Add bell pepper, & let simmer until sauce boils & thickens.
  • Step #10 Stir in pineapple chunks, & heat through.
