Crab Stuffed Sole Recipe

Ingredients
  • dash cayenne pepper
  • 3 tbsps melted butter or margarine, divided (optional)
  • 4 (4 oz) sole fillets
  • 1 c soft bread crumbs
  • 1 egg, lightly beaten
  • 1 c cooked or canned crabmeat - drained, flaked & cartilage removed
  • Sliced almonds
  • 1/2 tsp salt
  • grated Parmesan cheese
  • 1 tbsp all-purpose flour
  • 1 small onion, finely sliced
  • 1/2 c chicken broth

Directions
  • Step #1 In a bowl, onion, mix bread crumbs, egg, crab, salt & cayenne.
  • Step #2 Spoon onto fillets; roll up & secure with a toothpick.
  • Step #3 Place in a greased 2-qt.
  • Step #4 broiler-proof dish; drizzle with 2 tbsps butter.
  • Step #5 Bake, uncovered, at 350 degrees Ffor 25-30 mins or until fish flakes easily with a fork.
  • Step #6 Meanwhile, for sauce, place remaining butter in a saucepan.
  • Step #7 Stir in flour until smooth.
  • Step #8 Gradually add broth.
  • Step #9 Bring to a boil; cook & stir for 2 mins or until thickened & bubbly.
  • Step #10 Drain liquid from baking dish.
  • Step #11 Spoon sauce over fillets; sprinkle with cheese & almonds.
  • Step #12 Broil 5 in.
  • Step #13 from the heat until cheese is melted & almonds are lightly browned.
  • Step #14 Discard toothpicks.
