Apple And Currant Slice Recipe

Ingredients
  • 1 egg .
  • 2 c plain flour .
  • 1/3 c currants .
  • 1/2 tsp ground cinnamon .
  • 185 g butter, chilled, cubed .
  • 1 tbsp brown sugar .
  • 1 c self-raising flour .
  • 450 g stewed apples .
  • 1/2 c icing sugar

Directions
  • Step #1 Preheat oven to 180c.
  • Step #2 Grease & line a 3cm deep, 24cm X 29.
  • Step #3 5cm (base) laminton pan.
  • Step #4 Process flours, icing sugar & butter to resemble breadcrumbs.
  • Step #5 Add egg.
  • Step #6 Process until dough comes together.
  • Step #7 Turn onto a floured surface.
  • Step #8 Knead lightly.
  • Step #9 Press two-thirds of dough into prepared pan.
  • Step #10 Refrigerate.
  • Step #11 Wrap remaining dough in plastic wrap.
  • Step #12 Place into freezer until firm.
  • Step #13 Spread apple over dough base.
  • Step #14 Sprinkle top with currants, brown sugar & cinnamon.
  • Step #15 Grate frozen dough over top.
  • Step #16 Bake for 40 mins or until firm to the touch.
  • Step #17 Cool in pan, then cut into squares to serve.
