Coconut Cream Pudding Recipe

Ingredients
  • 1 c heavy cream
  • 1/2 tsp vanilla extract
  • 1/2 c shredded coconut meat, unsweetened
  • 1/2 tsp coconut extract
  • 1 egg, beaten
  • 3 packets Sweet 'n Low® sweetener
  • 1/2 tsp almond extract
  • 4 oz cream cheese

Directions
  • Step #1 Mix 1/4 c of cream with sweetener, extracts & coconut.
  • Step #2 Heat in microwave for 1 min.
  • Step #3 Let stand for 15 -20 mins.
  • Step #4 Beat egg with 1/4 c of cream.
  • Step #5 Pour remainder of cream in sauce pan, stir constantly, add cream cheese & cook on medium heat, until cream cheese melts.
  • Step #6 Add coconut & heat through.
  • Step #7 Add beaten egg, stir constantly, until thicken.
  • Step #8 Pour into 4 small ramekins & put in the fridge for at least 1 hr.
  • Step #9 Serve.
