Scallops With Lemon & Capers Recipe

Ingredients
  • 2 tbsps lemon juice .
  • 3 tsps butter, divided .
  • 1 1/2 tsps cornstarch .
  • 1 tsp minced garlic .
  • 1 tbsp sliced parsley .
  • 1 tsp grated lemon zest .
  • 1 tbsp capers, sliced if they are large .
  • 1/4 tsp pepper .
  • 1 c chicken broth .
  • 1 1/2 lbs sea scallops, patted dry .
  • 1/4 tsp salt

Directions
  • Step #1 Stir broth, juice, zest, capers, cornstarch, garlic, salt & pepper until cornstarch dissolves.
  • Step #2 Melt 2 tsp butter In a large-ish nonstick skillet over med-heat/flame.
  • Step #3 Add scallops & cook for 4-5 mins, turning once, or until they are golden & cooked through.
  • Step #4 Remove scallops to a plate.
  • Step #5 Add broth mixture to skillet & bring to a boil.
  • Step #6 Boil 1 min or until slightly thickened.
  • Step #7 Remove from heat & add in 1 tsp butter & parsley.
  • Step #8 Pour over scallops.
