Cranberry-orange Muffins ( Diabetic Friendly) Recipe

Ingredients
  • 1 c white flour .
  • 1 beaten egg .
  • 3/4 c orange juice .
  • 1/2 tsp baking soda .
  • 1 tsp grated orange peel .
  • 1 c whole wheat flour .
  • 3/4 c Splenda granular .
  • 1/2 c sliced walnuts (optional) .
  • 3 tbsps oil .
  • 1/2 tsp salt .
  • 1 c coarsley cut cranberries .
  • 1 1/2 tsps baking powder

Directions
  • Step #1 Combine cranberries & sugar while sifting dry ingredients together -- then add & stir in theto dry ingredients.
  • Step #2 Combine egg, juice & oil & grated peel & add to dry ingredients until just moistened.
  • Step #3 Pour batter into 12 muffin c, lightly sprayed or into paper muffin liners (or a loaf pan).
  • Step #4 Bake muffins at 375 degs for 25".
  • Step #5 Bake loaf at 350 degs for 50".
