Chocolate Chip Shortbread Cookiesi Recipe

Ingredients
  • 2 c confectioners' sugar
  • 2 tsps vanilla extract
  • 1/2 tsp coconut extract
  • 1/2 tsp salt
  • 1 c miniature semisweet chocolate chips
  • 4 c all-purpose flour
  • 1 c sliced pecans, toasted
  • 3 tbsps confectioners' sugar
  • 2 c butter, softened

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 In a large bowl, cream together the butter & 2 c confectioners' sugar.
  • Step #3 Beat in the vanilla & coconut extracts & salt.
  • Step #4 Add flour one c at a time, mixing well after each.
  • Step #5 Stir in the chocolate chips & pecans.
  • Step #6 Roll the dough into 1 inch balls & place them 2 inches apart onto an ungreased cookie sheet.
  • Step #7 Flatten with a fork dipped in confectioners' sugar.
  • Step #8 Bake for 12 to 15 mins in the preheated oven, until a light golden brown.
  • Step #9 While cookies are still warm from the oven, dust with the remaining confectioners' sugar.
