Chicken Carrot Pilaf Recipe

Ingredients
  • 1 lb boneless, skinless chicken breasts cut into thin strips
  • 1/4 c butter or margarine
  • 1 medium onion, sliced
  • 1/2 c sliced fresh mushrooms
  • 1 1/2 c uncooked long grain rice
  • 2 tbsps minced fresh parsley
  • 4 c chicken broth
  • 1/4 c sliced sweet red pepper
  • 5 medium carrots, sliced

Directions
  • Step #1 In a large skillet, brown chicken in butter.
  • Step #2 Remove & keep warm.
  • Step #3 Add the rice, onion, carrots, mushrooms & red pepper to the skillet.
  • Step #4 Cook & stir until rice is browned & onion is tender.
  • Step #5 Stir in broth.
  • Step #6 Place chicken over rice mixture.
  • Step #7 Bring to a boil.
  • Step #8 Reduce heat; cover & let simmer for 20-25 mins or until rice is tender.
  • Step #9 Stir in parsley.
  • Step #10 Let stand for 5 mins before serving.
