Creamy Baked Grits With Sun-dried Tomatoes Recipe

Ingredients
  • 1 tsp sliced fresh thyme .
  • 2 tbsps butter .
  • 1/2 c sliced drained sun-dried tomatoes packed in oil (2 1/2 oz) .
  • sliced fresh chives (optional) .
  • pepper .
  • 1 garlic clove, sliced .
  • 1 c crumbled soft fresh goat cheese (about 4 oz) .
  • 2 1/4 c low sodium chicken broth .
  • salt .
  • 3/4 c whipping cream .
  • 1/2 c quick-cooking hominy grits (3 oz)

Directions
  • Step #1 Preheat oven to 350°F Generously butter 8x8x2-inch glass baking dish.
  • Step #2 Bring broth, 2 tbsps butter, & garlic to boil in heavy medium saucepan.
  • Step #3 Gradually whisk in grits & return mixture to boil, whisking every once in awhile.
  • Step #4 Reduce heat to medium-low, & let simmer until grits are thick & almost all broth is absorbed, cover, whisking frequently, about 8 mins.
  • Step #5 Whisk in 1/2 c cream & let simmer 5 mins, whisking every once in awhile.
  • Step #6 Whisk in remaining 1/4 c cream & let simmer until very thick, stirring often, about 5 mins longer.
  • Step #7 Stir in tomatoes & thyme.
  • Step #8 Spice up to taste with salt & pepper.
  • Step #9 Pour into prepared dish.
  • Step #10 Sprinkle top goat cheese over.
  • Step #11 Bake until cheese softens, about 15 mins.
  • Step #12 Garnish with chives, if desired, & serve as soon as possible.
