Green Bean/carrot Casserole Recipe

Ingredients
  • 2 tbsps flour .
  • 3 tbsps butter .
  • 2 eggs, beaten .
  • 1/2 c grated sharp cheddar cheese .
  • 1 3/4 c cooked green beans .
  • 1/2 tsp salt .
  • 1/8 tsp pepper .
  • 1 3/4 c cooked carrots, sliced in coins .
  • 1 tbsp olive oil .
  • 1 1/2 c milk .
  • 1/2 c Ritz cracker crumbs or panko .
  • 2 tbsps minced onions

Directions
  • Step #1 Cook onions slightly in fat, add flour & seasoning; mix well.
  • Step #2 Add milk slowly & cook this until slightly thickened.
  • Step #3 Add eggs slowly & wisk quickly to cook over low heat/flame,1 min.
  • Step #4 Add cheese & stir in the vegetables.
  • Step #5 Pour into greased baking dish; cover with crumbs & dot with butter.
  • Step #6 Bake in a moderate oven (350) for 30 mins.
  • Step #7 Note: Undercook the green beans & carrots as they will be cooked again in the oven.
  • Step #8 I steam mine for 5 mins only.
