Gluten-free Rice Flour Baking Mix Recipe

Ingredients
  • Optional .
  • 3 c rice flour .
  • 1 c tapioca starch .
  • 2 c potato starch (not flour) .
  • xanthan gum or guar gum (see directions) .
  • 3 c brown rice flour

Directions
  • Step #1 Sift flours together, & store this in an airtight container in the refrigerator.
  • Step #2 Use to replace gluten-containing flours in most recipes.
  • Step #3 If you're using it to make cakes, add 1 tsps xanthan or guar gum per c of flour mix.
  • Step #4 For breads or pizza, add 2 tsps xanthan or guar gum per c of flour.
  • Step #5 For cookies, latkes & other recipes, use no xanthan or guar gum or just add 1 tsps per c of flour mix.
