Butternut Squash Soup Recipe

Ingredients
  • 2 (14 1/2 oz) cans chicken broth .
  • 16 saltine crackers .
  • 1 garlic clove, minced .
  • 1 medium onion, sliced .
  • 2 (2 lb) butternut squash, peeled, seeded & cut into chunks .
  • 1/2 c light sour cream .
  • 1 tbsp olive oil .
  • 1/2 tsp ground allspice

Directions
  • Step #1 HEAT oil in large saucepan on medium heat.
  • Step #2 Add squash, onion & garlic; cook 5 min or until crisp-tender, stirring every once in awhile.
  • Step #3 Add allspice; cook & stir 1 min ADD chicken broth.
  • Step #4 Bring to boil; cover.
  • Step #5 Reduce heat to low; simmer 15 min or until squash is tender.
  • Step #6 Add, in batches, to food processor/blender container; cover.
  • Step #7 Blend until smooth.
  • Step #8 Return to saucepan; cook this until heated through, stirring every once in awhile.
  • Step #9 LADLE soup into 8 bowls.
  • Step #10 Add 1 tbsps sour cream to each serving; swirl slightly.
  • Step #11 Serve with crackers.
