Sweet & Sour Pork Recipe

Ingredients
  • 3 tbsps oil .
  • 1 garlic clove, minced .
  • 1 small red bell pepper, sliced .
  • 2 eggs, beaten .
  • 1 c cubed pineapples .
  • 1 lb lean pork loin, cut in bite-size cubes .
  • 1 small green bell pepper, sliced .
  • 1/2 c pineapple juice .
  • 1/2 c vinegar .
  • 1/2 c sliced onions .
  • peanut oil .
  • 1 c sugar .
  • 1 dash salt .
  • cornstarch .
  • 2 tbsps cornstarch .
  • 1/2 c orange juice .
  • 2-3 dried red chili peppers, seeded & sliced

Directions
  • Step #1 Heat peanut oil in skillet.
  • Step #2 Toss cubed pork in egg, then dredge in cornstarch.
  • Step #3 Shake off excess cornstarch & fry in hot oil until done through & browned on all sides.
  • Step #4 Drain on paper towels & keep warm in a 200 degree oven.
  • Step #5 Combine the sugar, salt, & 2 tbsps cornstarch in a medium saucepan.
  • Step #6 Add the orange juice, vinegar, pineapple juice, & tomato paste & stir until mixed.
  • Step #7 Cook over med-heat/flame, stirring constantly, until sauce is thickened.
  • Step #8 Reduce heat to low.
  • Step #9 Place 2 tbsps of oil in a hot wok & add the garlic & hot pepper flakes.
  • Step #10 Stir fry for a few seconds, pineapple, then add the bell peppers, & onions.
  • Step #11 Stir fry until vegetables are hot through, but still slightly crisp.
  • Step #12 Arrange cooked vegetables & pork cubes with steamed rice on a serving plate & serve this with the sauce on the side.
