County Fair Elephant Ears Recipe

Ingredients
  • 1/4 c warm water
  • 1 1/2 tbsps white sugar
  • 3 1/2 tsps ground cinnamon
  • 1/2 c milk, scalded & cooled
  • 1/2 tsp salt
  • 4 tbsps melted butter
  • 2 c white sugar
  • 2 c all-purpose flour
  • 1 egg yolk
  • 1 (.25 oz) package active dry yeast
  • 2 tbsps butter, softened
  • 1/4 c sliced walnuts
  • 1/2 c butter

Directions
  • Step #1 Mix flour, sugar & salt.
  • Step #2 Cut in butter, as for pastry.
  • Step #3 Soften yeast in water.
  • Step #4 Combine milk, egg yolk & softened yeast.
  • Step #5 Add to flour mixture & mix well.
  • Step #6 Cover dough & put in the fridge for at least 2 hrs.
  • Step #7 Place dough on a lightly floured cutting board & knead lightly.
  • Step #8 Cover with a cloth & allow to rest for 10 mins.
  • Step #9 Roll dough into a rectangle, 10x18 inches, & brush with soft butter.
  • Step #10 Mix 1/2 c sugar & 2 tsps cinnamon & sprinkle evenly over dough.
  • Step #11 Roll as for jelly roll, sealing the edge.
  • Step #12 The roll should be 18 inches long.
  • Step #13 Cut dough into 1-inch slices.
  • Step #14 Mix remaining sugar & cinnamon on a large square of waxed paper or aluminum foil.
  • Step #15 Place slices, one at a time, on sugar mixture & roll into 5-inch balls.
  • Step #16 Sprinkle top nuts on top & press carefully.
  • Step #17 Place dough on ungreased cookie sheets, brush with melted butter & sprinkle with about 1 tsp of the sugar-cinnamon mixture.
  • Step #18 Bake as soon as possible in a preheated 400F degree oven about 12 mins.
  • Step #19 Cool on wire racks.
