Glazed Pork Tenderloin Recipe

Ingredients
  • salt, to taste .
  • 1/2 c currant jelly, can use jellied cranberry sauce .
  • 1/2 c chicken broth .
  • 2 (3/4 lb) pork tenderloins, trimmed, 1 1/2 lbs. total weight .
  • 1 tbsp bottled horseradish, grated, drained .
  • 1/2 c rhine wine, can use any sweet white wine .
  • pepper, to taste

Directions
  • Step #1 Preheat oven to 325F degrees F.
  • Step #2 Place tenderloins on meat rack in shallow roasting pan.
  • Step #3 Combine jelly & horseradish in microwavable dish or small saucepan.
  • Step #4 Heat high one min in microwave or over low heat/flame on stove top until jelly is melted; stir well.
  • Step #5 Brush half of mixture over tenderloins & roast for 30 mins; then turn tenderloins over.
  • Step #6 Brush with the remaining jelly mixture & continue to roast another 30-40 mins depending on thickness of tenderloins or until an instant meat thermometer register 160 degrees F.
  • Step #7 Transfer tenderloins to a cutting board; tent with foil wrap.
  • Step #8 Let stand (rest) 10 mins.
  • Step #9 Remove meat rack from pan & pour broth & wine into the pan.
  • Step #10 Place pan over stove burners; cook over medium high heat, stirring frequently & scraping up any browned bits, 4-5 mins or until sauce is reduced to 1/2 c.
  • Step #11 Strain sauce; season to taste with salt & pepper.
  • Step #12 Carve tenderloins into thin slices.
  • Step #13 Serve with the sauce.
