Dill Gazpacho Recipe

Ingredients
  • 1 tbsp balsamic vinegar
  • 6 medium ripe tomatoes, finely sliced
  • 1 green bell pepper, finely sliced
  • 2 tsps olive oil
  • 1/2 tsp ground black pepper
  • 2 cucumbers, peeled & finely sliced
  • jalapeno pepper, seeded & minced
  • 1/4 c sliced fresh dill
  • 1 onion, finely sliced
  • 1 large lemon, juiced
  • 1 tsp kosher salt

Directions
  • Step #1 In a large bowl, stir this together tomatoes, cucumber, onion, bell pepper, & jalapeno pepper.
  • Step #2 Spice up with lemon juice, balsamic vinegar, olive oil, salt & pepper.
  • Step #3 In a mixer or food processor/blender, puree half of the mixture until smooth.
  • Step #4 Return to bowl, stir in the dill & mix well.
  • Step #5 Cover & chill for at least one hr before serving.
