Step #3 Rub chicken under skin & all over the chicken with all of the spice mixture; cover & marinade in refrigerator for 4-24 hrs.
Step #4 Preheat oven to 450 degrees.
Step #5 Heat heavy large cast iron pan over medium high heat, add oil, placing chicken skin side down as soon as possible place a very heavy pan or foil wrap covered bricks on chicken & cook (without moving the chicken) until the skin is a golden brown (check with a tongs) till very crisp about 15 mins.
Step #6 Orange Sauce:.
Step #7 Meanwhile melt butter in a medium hot pan; add & saute onions for 3 mins add garlic, rice vinegar, ginger, brown sugar, orange juice & zest, lemon juice, water, & soy sauce; bring to a boil simmer for 5 mins.
Step #8 Mix together cornstarch & 2 tbsps cold water or Grand Mariner making a slurry; add the slurry to the sauce whisking all the time to keep the sauce smooth; reduce heat to medium low; & let simmer, about 5 mins.
Step #9 Remove the bricks & turn chicken skin side up & finish roasting for 20-25 mins.
Step #10 Until a thermometer inserted in the thigh registers 160-165 degrees when juices run completely clear, & the skin should be a gorgeous golden-brown, & exceedingly crispy.
Step #11 Remove chicken & let rest on a cutting board.
Step #12 De fat the pan drippings.
Step #13 Add the Orange Sauce to the pan juices.
Step #14 Strain the sauce.
Step #15 Pour sauce into a gravy boat drizzle some on a platter & place the chicken on the sauce with crispy crust up.
Step #16 Serving as soon as possible with extra sauce & Longevity noodles or rice.
