Cucumber Pan Rolls Recipe

Ingredients
  • 3 3/4 c all-purpose flour
  • 1/4 c water
  • 2 tsps minced fresh dill
  • 1 tsp salt
  • 1 large cucumbers - peeled, seeded, & sliced
  • 2 tbsps minced fresh chives
  • 1 tbsp sugar
  • 1/2 c sour cream
  • 1 (.25 oz) package active dry yeast

Directions
  • Step #1 Place cucumber in a mixer or food processor/blender; cover & process until smooth.
  • Step #2 Place 3/4 c of puree in a saucepan (discard remaining puree or save for another use).
  • Step #3 Add sour cream, water, sugar & salt to pan; heat to 120 degrees F-130 degrees F (mixture will appear separated).
  • Step #4 In a mixing bowl, yeast, mix 1-1/4 c flour, chives & dill; add cucumber mixture.
  • Step #5 Beat on lowish speed just until moistened; beat on high for 3 mins.
  • Step #6 Add enough remaining flour to form a stiff dough.
  • Step #7 Turn onto a floured surface; knead until smooth & elastic, about 6-8 mins.
  • Step #8 Place in a greased bowl, turning once to grease top.
  • Step #9 Cover & let rise in a warm place until doubled, about 1 hr.
  • Step #10 Punch dough down; let rest 10 mins.
  • Step #11 Shape into 12 balls; place this in a greased 13-ion.
  • Step #12 x 9-in.
  • Step #13 x 2-in.
  • Step #14 baking pan.
  • Step #15 Cover & let rise until doubled, about 45 mins.
  • Step #16 Bake at 375 degrees F for 30-35 mins or until golden brown.
  • Step #17 Remove from pan & cool on a wire rack for 10 mins.
  • Step #18 Serve warm.
