Crab And Corn Chowder By Don Morrison's Chowder House Recipe

Ingredients
  • 1 c half-and-half .
  • Ingredients .
  • 5 c potatoes, cubed & cooked about 4 large potatoes .
  • 2 (16 oz) cans canned whole kernel corn (drained but save the juice) .
  • 1 c evaporated milk .
  • 4 oz butter (1 stick) .
  • 1 (16 oz) can creamed corn .
  • 1 1/2 lbs fresh crabmeat, hand picked Maine Crab meat .
  • 2 tsps Old Bay Spice uping .
  • 1 large onion (sliced fine) .
  • 1 c clam broth

Directions
  • Step #1 Preheat 6-quart soup pot on medium-high heat with butter.
  • Step #2 Add onions, whole corn, & half the crabmeat.
  • Step #3 Cook until onions are clear.
  • Step #4 Add Old Bay seasoning & cook 3 more mins.
  • Step #5 Add clam broth, liquid from corn, & creamed corn.
  • Step #6 Bring to boil & add evaporated milk & half-and-half; slowly bring chowder to a low simmer being careful not to boil.
  • Step #7 Add potatoes.
  • Step #8 Add the remainder of the crabmeat the next day, just before serving the chowder.
  • Step #9 Cool chowder in refrigerator overnight & serve the following day.
  • Step #10 All chowders are always best if made the day before.
