Texas Caviar Casserole Recipe

Ingredients
  • 1 (13 1/2 oz) bag nacho cheese flavored tortilla chips .
  • 1 (10 oz) can cream of chicken soup .
  • 1 (10 oz) can red enchilada sauce .
  • 1 (15 oz) can black-eyed peas with jalapenos, drained .
  • 2 lbs lean ground beef .
  • 1 (10 oz) can Rotel tomatoes & chilies .
  • 1 c sliced onions .
  • 2 garlic cloves, minced .
  • 1 (10 oz) can cream of mushroom soup .
  • 4 c shredded four-cheese Mexican mix cheese

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 In a skillet over medium-high heat, saute ground beef, onions & garlic until meat is lightly brown & onions are limp.
  • Step #3 Drain off fat.
  • Step #4 Stir in remaining ingredients except for tortilla chips & cheese.
  • Step #5 In a 12-inch Dutch oven or deep oven-proof skillet, place alternate layers of meat mixture, cheese & crumbled chips.
  • Step #6 Bake for 35 mins or until bubbly.
