Chili's Margarita Grilled Chicken And Belinda's Mexican Rice Recipe

Ingredients
  • 1 tbsp minced garlic .
  • cumin, to taste .
  • 2 c chicken broth .
  • 1/4 c salsa .
  • 1 tbsp vegetable oil .
  • 1 c margarita mix .
  • For Chicken .
  • 1 c white rice .
  • pepper, to taste .
  • 1/4 c tequila .
  • garlic salt, to taste .
  • 4 boneless skinless chicken breasts .
  • garlic salt, to taste .
  • For Rice

Directions
  • Step #1 Marinate chicken in margarita mix, tequila, & garlic in refrigerator for several hrs, or overnight.
  • Step #2 (I soaked it overnight, & it was really flavorful.
  • Step #3 ) Remove chicken from marinade, & sprinkle with garlic salt & pepper.
  • Step #4 Preheat George Foreman or gas grill.
  • Step #5 Cook chicken just until cooked through (just until juices run clear-don't overcook, or it won't be as juicy).
  • Step #6 Serve with Mexican rice & black beans.
  • Step #7 Mexican Rice:.
  • Step #8 Cook rice in 1 tbsp oil, until lightly browned.
  • Step #9 Add chicken broth, salsa, & garlic salt; cover pan & let simmer for about 25 mins, cumin, or until rice is tender.
