Vegetarian Black Bean Soup Recipe

Ingredients
  • 1 (15 oz) can sliced tomatoes, undrained .
  • 1 c onions, sliced .
  • 1/2 tsp ground cumin .
  • 2 green onions, sliced .
  • 1 c potatoes, peeled & sliced .
  • 2 (15 oz) cans black beans, rinsed & drained .
  • 1 (15 oz) can vegetable broth, divided .
  • 2 garlic cloves, minced .
  • 1/2 tsp dried thyme .
  • 1/2 tsp hot pepper sauce

Directions
  • Step #1 In a saucepan, bring the onion, garlic & 1/4 c broth to a boil.
  • Step #2 Reduce heat, cover & let simmer 6-8 mins or until onion it tender.
  • Step #3 Stir in beans, cumin, potato, thyme, & broth; return to a boil.
  • Step #4 Reduce heat; cover & let simmer 20-25 mins, until potatoes are tender.
  • Step #5 Stir in tomatoes & hot pepper sauce; heat through.
  • Step #6 Sprinkle top with green onion.
