Vegan Colcannon Recipe

Ingredients
  • 6 spring onions .
  • 2 lbs boiling potatoes .
  • 4 tbsps vegan margarine .
  • fresh ground pepper .
  • salt .
  • 1 1/2 lbs cabbage, quartered .
  • 1 c soy milk

Directions
  • Step #1 Peel & quarter the potatoes.
  • Step #2 Slice the spring onions wafer thin.
  • Step #3 Boil the potatoes for 7 to 10 mins.
  • Step #4 Next add the cabbage to the pot.
  • Step #5 Cook for about 7 to 10 mins.
  • Step #6 The potatoes should be tender.
  • Step #7 Drain.
  • Step #8 Remove Cabbage & slice into thin strips.
  • Step #9 Add the margarine, half the milk & the salt & pepper to the pot.
  • Step #10 Mash.
  • Step #11 Do not leave lumps.
  • Step #12 Add the rest of the milk & mix until it is a puree.
  • Step #13 It should be thick.
  • Step #14 Add Shredded cabbage.
  • Step #15 Mix until mixed.
  • Step #16 Taste & season if needed.
  • Step #17 Return the pot to low heat, stirring frequently until hot.
  • Step #18 Place in heated bowl & garnish with onions.
