Ginger Carrot Soup - Gluten Free, Dairy Free Recipe

Ingredients

3 tsps crushed gingerroot (fresh) .
1/2 c applesauce .
4 c vegetable stock or chicken stock .
1/2 tsp turmeric .
1/2 c cooked rice .
1/2 tsp cinnamon .
1 medium onion, sliced .
1 tbsp olive oil .
1 sweet potato, peeled & cubed by 1/2 inch .
1 lb carrots, peeled & sliced .
ground black pepper (I use a lot & this gives it a little bite)

Directions

Step #1 In a stock pot, sauté the onions in the olive oil until translucent.
Step #2 Add the ginger, mix.
Step #3 Add carrots, sauté 3 mins.
Step #4 Add sweet potato, sauté 3 mins.
Step #5 Add rice, mix together.
Step #6 Add chicken stock & remaining ingredients & let simmer 25 mins.
Step #7 Puree mixture & return to stock pot.
