Ginger Carrot Soup - Gluten Free, Dairy Free Recipe

Ingredients
  • 3 tsps crushed gingerroot (fresh) .
  • 1/2 c applesauce .
  • 4 c vegetable stock or chicken stock .
  • 1/2 tsp turmeric .
  • 1/2 c cooked rice .
  • 1/2 tsp cinnamon .
  • 1 medium onion, sliced .
  • 1 tbsp olive oil .
  • 1 sweet potato, peeled & cubed by 1/2 inch .
  • 1 lb carrots, peeled & sliced .
  • ground black pepper (I use a lot & this gives it a little bite)

Directions
  • Step #1 In a stock pot, sauté the onions in the olive oil until translucent.
  • Step #2 Add the ginger, mix.
  • Step #3 Add carrots, sauté 3 mins.
  • Step #4 Add sweet potato, sauté 3 mins.
  • Step #5 Add rice, mix together.
  • Step #6 Add chicken stock & remaining ingredients & let simmer 25 mins.
  • Step #7 Puree mixture & return to stock pot.
