Chicken Matzo Ball Soup Recipe

Ingredients
  • 1 dash white pepper
  • 2 eggs, lightly beaten
  • 1/2 tsp salt
  • 2 tbsps melted butter or margarine
  • 6 c chicken broth
  • 1 tsp sliced fresh flat-leaf parsley
  • 1 tbsp water
  • 1/2 c matzo meal
  • 1 medium carrot, cut into 2 inch julienne strips

Directions
  • Step #1 In a small bowl, mix eggs with the melted butter or margarine.
  • Step #2 Stir in matzo meal, pepper, parsley, salt, & water to form a soft dough.
  • Step #3 Cover & put in the fridge for at least 30 mins.
  • Step #4 Bring chicken broth & carrots to a boil in a large pot.
  • Step #5 Reduce heat to a simmer.
  • Step #6 Shape the matzo dough into 12 balls.
  • Step #7 (For easier shaping, dip hands in cold water from time to time).
  • Step #8 Drop the matzo balls into the simmering broth.
  • Step #9 Cover & cook for 30 to 40 mins.
