Cream Of Broccoli Vegetable Cheese Soup Recipe

Ingredients
  • 1 celery rib, sliced .
  • 3 tbsps butter .
  • 1/4 c flour .
  • 2 medium potatoes, peeled & sliced .
  • 1 large leek, sliced white & light green parts .
  • 2 garlic cloves, minced .
  • 1/4 tsp pepper .
  • 1 c fat-free half-and-half, can use regular .
  • salt, to taste .
  • 2 tbsps chicken soup base .
  • 1 large head of broccoli, sliced .
  • 1 onion, sliced .
  • 2 c shredded gouda cheese or cheddar cheese (any mild cheese is good too) .
  • 1 c sliced carrots

Directions
  • Step #1 Place broccoli, carrots, potatoes, celery, garlic, leeks, onions, soup base & pepper In a large-ish soup pot.
  • Step #2 Add enough water to just cover.
  • Step #3 Bring to a boil; reduce heat & let simmer for 20-25 mins or until everything is tender.
  • Step #4 Using an immersion mixer (or use a food processor/blender or mixer) puree.
  • Step #5 Retun to pot.
  • Step #6 In a small saucepan, melt butter.
  • Step #7 Whisk in the flour & cook for about 2 mins, stirring constantly.
  • Step #8 Add the butter/flour roux to the soup pot.
  • Step #9 Add half & half & cheese.
  • Step #10 Heat carefully to melt cheese & thicken, stirring very often.
  • Step #11 Add salt and/or more pepper to taste.
