Burritos Grande Recipe

Ingredients
  • 3 garlic cloves, minced .
  • 1/4 c lemon juice .
  • 1 tsp salt .
  • 1 c Cotija cheese, crumbled .
  • 3/4 c water .
  • 1/2 tsp Mexican oregano .
  • guacamole .
  • 1 1/2 lbs pork butt .
  • 60 inches flour tortillas .
  • 1/3 c tequila .
  • 1 tbsp olive oil .
  • 1/2 c fresh cilantro, sliced .
  • 1/2 c long-grain white rice .
  • 6 dried ancho chiles .
  • 1/4 c tomato sauce .
  • salsa fresca .
  • sour cream

Directions
  • Step #1 Stem chilies.
  • Step #2 Place in a mixer or food processor/blender & whirl until finely ground.
  • Step #3 Add tequila, garlic, olive oil, 1/4 c water, lemon juice, oregano & 3/4 t.
  • Step #4 salt.
  • Step #5 Whirl until smooth.
  • Step #6 Cut meat across the grain in1/2 inch thick & 3-4 inch long slices.
  • Step #7 Pour marinade into a freezer bag & add meat.
  • Step #8 Press out air & seal.
  • Step #9 Marinate for 24 hrs.
  • Step #10 Prepare grill.
  • Step #11 On a cutting board lay parallel about 2 inches apart 2 metal skewers.
  • Step #12 Lift meat from marinade-I prefer to use a colander over a large bowl.
  • Step #13 Thread meat strips onto a pair of skewers.
  • Step #14 Repeat.
  • Step #15 You will have 2 or 3 double skewers, depending on the length of your skewers.
  • Step #16 Cook on grill for about 20 mins-you want the meat well browned & a little crusty.
  • Step #17 Meanwhile in a medium saucepan over high heat bring 3/4 c water, rice, tomato sauce & remaining salt to a boil.
  • Step #18 Reduce heat to a simmer, cover & cook for 15 to 20 mins-check to make sure rice isn't sticking.
  • Step #19 In a small sauce pan over low heat/flame pour in beans with their liquid.
  • Step #20 Allow to simmer, stirring a few times to prevent sticking.
  • Step #21 Remove meat from grill & cover with foil wrap.
  • Step #22 Heat tortillas on grill, about 2 mins.
  • Step #23 To Assemble:.
  • Step #24 Remove meat from skewers.
  • Step #25 Cut into 1/4 inch wide strips.
  • Step #26 Lay tortillas flat.
  • Step #27 Put equal amounts of meat, sour cream, rice, beans (lift out of pan with slotted spoon), guacamole, salsa fresca & cilantro.
  • Step #28 Fold envelope style & serve.
  • Step #29 Prep & cooking times do not reflect marinating time.
