Chicken Soup With Stuffed Noodles Recipe

Ingredients
  • 1 (3 lb) broiler-fryer chicken, cut up
  • 3 tbsps butter or margarine, melted
  • 2 tsps salt
  • 2 eggs
  • 1 1/4 c seasoned bread crumbs
  • 1 1/4 c all-purpose flour
  • 1 tsp vegetable oil
  • 1 medium onion, sliced
  • NOODLES:
  • 1 tsp salt
  • 2 celery ribs, sliced
  • FILLING:
  • 1 egg
  • 4 medium carrots, sliced
  • 2 1/2 quarts water
  • 1/4 tsp pepper
  • 5 tbsps water

Directions
  • Step #1 Place chicken, water, salt & pepper in a large soup kettle.
  • Step #2 Cover & bring to a boil; skim fat.
  • Step #3 Reduce heat; cover & let simmer 1-1/2 hrs or until chicken is tender.
  • Step #4 Debone chicken & cut into chunks; return to broth.
  • Step #5 Meanwhile, for noodles, mix flour & salt in a medium bowl.
  • Step #6 Make a well in the center.
  • Step #7 Beat together the egg, water & oil; pour this into well.
  • Step #8 Stir together, forming a dough.
  • Step #9 Turn dough onto a floured surface; knead 8-10 times.
  • Step #10 Roll into a 16-in.
  • Step #11 x 12-in.
  • Step #12 rectangle.
  • Step #13 Combine filling ingredients; mix well.
  • Step #14 Sprinkle top over dough to within 1/2 in.
  • Step #15 of edge; pat down.
  • Step #16 Moisten edges with water.
  • Step #17 Roll up jelly-roll style from long end; cut into 1/2-in slices.
  • Step #18 Add noodles to carefully boiling soup & cook for 6-8 mins or until tender.
